Cajun Red Beans and Rice

Ingredients

  • Red Beans 2 Cups
  • Rice 2 Cups
  • Celery 3-4 Stalks
  • Yellow Onion 1
  • Green Pepper 1
  • Garlic 6 Cloves
  • Tomato Paste 3-4 Tablespoons
  • Veggie Broth 1 Cup
  • Bay Leaves 3
  • Parsley To Taste
  • Hot Italian Beyond Sausage 1 Package
  • Paprika to taste
  • Smoked Paprika to taste
  • Other seasonings of your choice to taste

Directions

    Soak, then cook the beans. Then cook the rice.

    Heat 2 pans. In one pan, cook sausages. In the other pan, saute celery, onion, green pepper. Once the peppers and onions have cooked for a few minutes, add garlic, bay leaves, veggie broth, seasonings, tomato paste, and beans. If your beans are already cooked through, wait to put them in until later.

    Simmer for at least 15-20 minutes and serve! Garnish with parsley if you have it.
