Chickpea Sandwich

It's really hard to mess up this recipe so try different ingredients and improvise with what you have. If you don't have celery, no worries, if you want to mix in more/less sauce, go for it.

Ingredients

  • Chickpeas 2 cups
  • Lettuce 1-2 handfuls
  • Tomato 1-2
  • Bread 1/2 loaf
  • Red Onion 1/2
  • Jalapeno 1-2
  • Lemon 1/2
  • Celery 1-3 stalk
  • Veganaise 1/4 cup
  • Red Wine Vinegar 1 tablespoons
  • Mustard 1-2 tablespoon
  • Hot Sauce to taste
  • Herbs and Spices 1-2 tablespoons

Directions

    Mash up the chickpeas

    Dice all the veggies

  3. 3

    Mix the veganaise, hot sauce, vinegar, mustard, herbs and spices, lemon juice in a bowl.

    If you want to toast the bread, do it- otherwise just make the sandwich and top it with lettuce and tomato
