Hodge Podge Quinoa Bowl with White Beans and Kalamata Olives

Option to sprinkle some vegan cheese and get real funky with it.

Ingredients

  • Quinoa 2 Cups
  • Kale 1 bunch (ribbed and chopped)
  • White Beans 2 cups (cooked)
  • Kalamata Olives Handful
  • Veg Whatever you got
  • Lemon 2, juiced
  • Garlic 5 cloves
  • Olive oil 1/3 cup
  • Spices to taste

Directions

    Cook quinoa.

    In a large pan, place quinoa, kale and white beans and heat it up.

    After it's heated, top it with finely minced kalamata olives and any other veggies you may want to use for a raw garnish - we used radishes and green onion.

    Prep the dressing by blending lemon juice, minced garlic, salt, and red pepper flakes until you have a creamy yellow sauce.

    Drizzle that sauce and hit it with some pepper.
