This recipe is super easy because you can really use whatever you have and just eyeball measurements - no precision needed at all - just don't add too much smoked paprika. Also hold off on the jalapeno if you don't want spice.
Ingredients
- Black Beans 2-4 Cups
- Onion 1-2
- Carrot 2-5
- Jalapeno 1-3
- Garlic 4-8 cloves
- Corn 1-3 Cups
- Diced Tomato 1 Can
- Celery 1-3 stalks
- Paprika 1-2 teaspoons
- Smoked Paprika 0.5 teaspoon
- Veggie Broth 2-4 cups
Directions

Chop/Dice the celery, carrot, onion, jalapeno, and garlic

Saute the veggies for 4-5 minutes - then add the spices. I also usually throw in a mixture of onion powder, garlic powder, some oregano, marjoram - whatever you're feeling.

After veggies have cooked with the spices for a minute or two, add the tomato, beans, corn, and broth

Keep the temperature high until you see some bubbles on the surface - then reduce to a simmer and cook for another 15-30 minutes.
