Ingredients
- Soba Noodles 1 package
- Green Beans A few heaping handfuls
- Shiitake Mushrooms 20ish
- Scallions a few
- Tahini 1/4 cup plus 2 tablespoons
- Rice Vinegar 3 tablespoons
- Miso paste 2 tablespoons
- Tamari 2 tablespoons
- High quality sriracha 1.5 tablespoons
- Toasted sesame oil a drizzle
- High heat oil a drizzle
- Sesame seeds a few spoonfuls

Make sauce: Blend together (using immersion blender) tahini, rice vinegar, miso, tamari, and sriracha. If too thick, add a splash of water.

Chop mushrooms. Cut stems off green beans. Chop scallions.

For mushrooms: grab a large pan and heat on medium heat. For green beans: grab a pot (with a steamer basket) and place 1 inch water in pot, start to bring to a boil. For soba: grab another pot and fill with enough water to cook the pasta, start to bring to a boil.

Splash a little high heat oil into large pan - cook the mushrooms. Once boiling, place steamer basket on pot - steam the green beans. Once boiling, cook the soba in your other pot.

When soba is finished cooking - drain it and then drizzle a little toasted sesame oil over to give it flavor and to help prevent the noodles from sticking.

Put soba in a big bowl, then cover it with the steamed green beans, the cooked shiitake mushrooms, the raw chopped scallions, the tahini sauce, and sesame seeds.
