THE BEST Cheez Sauce with White Beans and Cashews

Prep Time Several hours (in order to soak beans and cashews)
Cook Time 15 min
Difficulty easy

This is great on anything to give it umami cheesy flavor. Try drizzling it on cabbage steaks (and add some shiitake mushroom bacon for extra goodness)

Ingredients

  • White Beans 1 cup
  • Cashews 1 cup
  • Yellow Onion 1
  • Garlic 4 big cloves
  • Veggie broth or mushroom broth a few big glugs
  • Miso paste a big spoonful
  • Apple cider vinegar a splash
  • Liquid smoke a couple drops
  • Lemon 1/2
  • Spices of choice depending on your flavor profile you might want smoked paprika, regular paprika, rosemary, thyme, lemon pepper, red pepper flakes, etc
  • Sriracha a squirt
  • Salt and Pep to taste
  • Nutritional Yeast a small spoonful - don't overdo it since the flavor will take over

Directions

    Soak and cook your white beans (skip this step if you're using canned beans)

    Soak cashews for 4 hours in room temp water OR if you're short on time put the cashews in HOT water for 1 hour

    Chop onion and garlic - saute on medium heat

    Juice the lemon

    Add everything to blender and blend it up! Adjust seasoning to taste.
